I haven't read either, so who can talk to me about the qualities of these writers?
Who should I choose and why?

Have read both, but lost interest in WoT after TCoT and Vorkosigan has never done it for me, so abstaining here.
I will expand your TBR pile.

I've only read a short story from Bujold, but I wasn't a fan of it.

Wheel of Time has a lot of flaws, but Jordan is one of the greatest worldbuilders.

I love Lois McMaster Bujold's books. Her fantasy is good, but her Vorkosigan series is a great adventure in space with interesting characters. I just can't read Robert Jordan. I think calling trolls trollochs did it for me.

Voted for Lois McMaster Bujold, because I like the original ideas with treatment of Gods, and well written prose, especially in The Curse of Chalion and related books. Also she includes intelligent versatile women and even had an older woman main character in Paladin of Souls. ScarletBea I think you may enjoy this series, each is standalone but slightly interrelated
Robert Jordan, I tried long ago, but series too long for me to bother keeping up.
