I remember in university the lecturer (with whom I really didn't get on) had written a story about a Welsh farmer, in which he used the word 'dagging' to refer to castration.
I was quick to point out that dagging generally refers to trimming the dirty wool on a sheep's back end, and that if I hired a man to dag my sheep and he started hacking off their testicles, i'd be less than pleased.
I have very niche experience, but it does come in handy when city folk try and write about farming.
