Generally speaking, I prefer my fantasy to be serious, but there are a few exceptions:
Kings of the Wyld is hilarious for a D&D fan like myself. It's scarily close to so many campaigns I've played/run.
Jon Hollins' Dragon Lords trilogy is also good, though I flet it went too comedic for its own good at times. Still a worthwhile read though.
If we're counting SF, the John Scalzi's Redshirts is a near-flawless parody of/homage to Star Trek. Just don't let the codas ruin it for you.
And whatever you do, be wary of Steven Erikson's Wilfull Child. I cannot see how he's got three books in that series. You might well like them, but I did not.
